You will need way more chaos res on your gear before switching to divine flesh, watcher eye only give you 30% to 50% chaos res which i dont think will be enough to get you to the cap of 85% max chaos res. If you use divine flesh with less than 75% chaos res you will end up taking more damage than just not using it.

Normal mobs can one shot me for some reason

Are you sure your chaos res is capped at 85% on your character info? Because your only item with chaos res is a ring with 20% and i dont think that enough even with watcher eye 50% chaos res
